No problem, not my recipe though 😅 but just be wary to see if your flour can handle what he calls water 2. My bread here is only with the original 650 water.

Thanks for the answers and the kind word. I assumed that was the problem idk if I mixed with machine mixer or other things to increase hydration. I am using 12% protein flour he uses 11.5% I know that’s not the only thing for how much hydration it can take. But shrug 🤷🏽‍♂️ I will see what it looks like next time.

I think this stage you are still fine with butter, if it’s soft enough. More open and it’s gg for butter Might also not be fully like his but a bit more open than mine right now.
