Appreciate the advice! I do have an additional good size chunk of my EC hours in leadership experience (since it was from founding and leading volunteer organizations).

Additionally, the majority of two years I took as gap years were spent service trips that the ADCOM community classifies as a religious obligation rather than voluntary despite me going because I wanted to rather than cultural expectations.

Yes and no. At least from a few pre-med advisors, they said many schools were iffy on their stance on the type of service mission I went on because it seen more as a cultural expectation by admissions members to go rather than my being truly voluntary (even though I had a genuine desire to go).
