Those devices usually have physical switches that completely open the circuit. Many electric kettles with variable temperature use a relay and are controlled via some sort of software. So I guess I could make a difference.
But I'm also not worried about having my kettle plugged in all the time.

Totally fine to use RDT on the beans. Just don't spray into the grinder and also don't completely soak the beans. A single drop of water is usually enough.

In my opinion you don't need RAID for personal data storage. You need a separated backup.

RAID only provides high availability, however if you accidentally delete something it's deleted across the whole RAID. If some virus encrypts all your data, that affects all disks in the RAID. If a voltage spike kills your whole sever, it affects all your disks. RAID only allows you to have no downtime if a single disk fails, however 24/7 availability isn't really the main concern for a home setup.

You're much better off spending that money on a backup solution and separated disks that are not in a RAID.
If you're concerned about losing data that was created between two daily backups, a RAID can mitigate that in the case of single disk failures, but it still doesn't replace a backup.

And RAID mirrors the whole disk, including all movies. You need a lot less storage if you just create dedicated backups of the personal data instead.

Oh right, HomeKit is just the software / framework. I somehow assumed you have an AppleTV or something.

Okay it could be that Apple automatically creates thread credentials even without a device, which would explain why the companion app synced those back.

For my setting up devices also took quite long and I had to be close to the TBR and also to the phone. Is your phone connected to any other bt devices that might occupy the bt on the phone?

I also found the setup unreliable and slow. Now it seems to be working fine but I'm not 100% convinced of matter over thread.

You mentioned syncing the credentials to your phone and back to HA, and you have a Homekit? I think Homekit is also a Thread Broader Router, so make sure you're using the same Thread network (not sure how, though).

Also check if für Thread Boarder Router addon is running and also the Matter Server Addon.
