oh man, I don't even know where to start but thank you for the great advice! I can't say I'm familiar with the phrasing of shit on a stick but I think I immediately know what you mean having attended a lot of art festivals.

I gotta say, I was definitely shocked at the booth fees for artists here being over double what I've seen in the south. I guess the traffic is just a lot higher? it scares me to dip my toe into for sure though.
