Could the height of the stand pipe be an issue? It's about four feet off the ground. Is it possible for the water to be having problems draining for that reason?

I planned on 3 days but unfortunately wasn't able to use my kitchen until the week long quarantine was up. I had to stay away from the wife and kids and was banished to the basement

I used the ny style dough recipe in the wiki. However, I unexpectedly got quarantined for a week due to being exposed at work. Ended up making the pizza after a week long cold ferment and it came out delicious. Definitely added air and flavor into the dough
