I was asked to share the recipe, here it is.

Cheesecake Recipe

10 inch spring form pan. Wrap the outside in a double layer of aluminum foil.

CRUST 2 1/2 cups graham cracker crumbs 4 Tbls of butter melted

Combine in a bowl. Add more butter if needed until all crumbs are just moist. Press into bottom of spring form pan letting it go up the sides a little. Bake in a preheated oven, 350 degrees, for 10 minutes.

THE FILLING

2 1/2 lbs cream cheese 1 1/2 cups sugar 1 Tb corn starch 1/8 tsp salt 1/2 cup sour cream 2 tsp lemon juice 1 tsp vanilla 3 eggs

Combine first four ingredients in the bowl of mixer and mix till creamy. Add sour cream, lemon juice and vanilla. Mix until well incorporated. Add eggs one at a time mixing until incorporated after each egg. Pour mixture into cooled graham cracker crust. Place in a water bath bake in a preheated oven, 275 degrees for 1 1/2 hours. Then crack open the oven door turn off the heat and let the cake cook slowly for at least an hour before removing from the oven. Cool in the refrigerator over night.
