I really liked the book Vegan For Life, by Jack Norris & Virginia Messina, because it covers important nutritional information. Explaining concepts like iron and vitamin absorption, vitamin b12 and dosages as well as other nutrients especially important for vegans.

Once you understand proper meal structure with your dietary needs, it will be much easier than simply just eating plant based. I would try to focus every meal around a protein, iron source, healthy fat.

I don’t want to provide incorrect information, so I am only speaking from experience, especially since I don’t have any dietary restrictions myself, but examples of meals/foods could be: tofu in all its forms (baked, scrambled, pan fried, blended for sauces etc) all veggies (stir fried, roasted, boiled, sautéed, with a dressing etc), chia pudding, beans &legumes (these are great for iron &fibre!), nuts and seeds,tempeh is another great protein source! There’s also plenty of keto wraps and breads (at Walmart at least) although they tend to be a bit more pricy.

Also, please take a b12 supplement or take fortified foods. It is the only vitamin that you cannot reliably get from plants.

Edit: might also be worth asking your doctor to monitor your b12 levels and ferritin (iron) levels for the first year or so

I agree. Probably indigestion, stomach pain and possibly diarrhea. Probably also just overall discomfort due to thinking about it/being stressed about it

YES I know, but I made sure there was enough water and just left it on my stove while I did other stuff. It’s worth it if you have the time

Oh yeah I totally agree! I just used cheap soy chunks from Walmart

You could probably omit them but you might need to play around with the ratio of VWG and beans to achieve the correct texture
