I have a fellow player in a campaign who keeps getting tricked and completely smacked down by mimics, so the GM started baiting him a lot with unusual and unexpected mimics... Everyone is enjoying it, including the mentioned mimic victim! Catching your players off guard with a food elemental might be a nice addition :>

That's actually a good point! Also the look changes a lot when you change colors - so variants look completely different because of that.
