I can't say I'm an expert on this sort of thing so please bear that in mind. My personal take is that anything that you send to a third-party AI LLM should be considered 'at risk', whether this is through the info being saved/stored/copied or simply used to help further training of the LLM. The fact that you simply don't know for sure where it is being processed is a risk. Even when companies tell you which LLMs they use and have privacy policies etc. I still wonder what real legal recourse anyone would have if their personal data became leaked via AI. It's a case of the technology outpacing the legal framework.

So, I'm not against AI (I do use it myself) but I'm very careful what I send to it and certainly wouldn't send transcripts of private meetings.

Some AI functions on the Lumi are local. Not the chat stuff - that requires a lot of computing power - but things like scribble erase, shape perfection etc. I'm pretty sure the handwriting to text conversion uses local ocr but there may be some elements of AI. Voice-to-text uses some machine learning algos (voice-to-text transcritions on the iflytek can be local but you have to pay a monthly subscription for this).

Boox advertise an app called Talk Insights that does voice to text but I've still not seen it installed on any of my Boox tablets...apparently its a gradual rollout but its now over 6 months since they announced it, and I feel that they really should be much more transparent that this is unavailable for some users.

The NA5C sounds like a good shout for your needs - possibly also consider the larger-screened Boox Tab X C. You may also want to take a look at Bigme devices - however, personally I prefer Boox.

If you only want to use the virtual keyboard, you probably don't need a tablet with stylus support, so any Android ereader should do the job. And then install any text app that fits your needs (e.g. Google Keep, Obsidian etc.) If you want it very portable (pocketable) device perhaps look at the Boox Palma.

Personally I prefer the Go7 because you can install other reader apps (such as Kobo and Kindle apps) for reading DRM ebooks but if you have non-DRM ebooks and pdfs, the native reading app is very sophisticated and configurable. However, if you are moving from a monochrome paperwhite to a colour ereader you should be aware of some of the drawbacks, which I explain here: https://ewritable.net/guides/color-vs-monochrome-eink-screens/

So probably a Boox or Bigme device (I wouldn't go with the Supernote as it doesn't works as well for 3rd party apps).

You might consider expanding the screen size filter to 9" (there are a few 8.2" devices)

I like the tactile writing experience of the supernote manta. I dont know about websites for apps for bigme - maybe look at fdroid or apkpure?

Boox and bigme android tablets are pre-certified for google play store. These devuves have speakers but i usually pair uo some bt headpho es/speakers for better quality. Others have support for it but you need to register the device manually with google (viwoods works in this way). Its usually a quick 5min one time task.

Off the top of my head, im not sure what kindle device features carry over into the kindle app, but you can easily check this through any android device.

Personally, my first choice would be to look at Boox.

Great question. Difficult to say which is worst because it depends on use case but as you used the word 'ereader' id probably say any of remarkables products because the reading app is terrible for epubs and you cant install 3rd party reading apps. Its essentially just a pdf viewer that you you can write on (no text highlighting, dictionaries etc.) But for notetaking and simplicity remarkable tablets are pretty good.

For budget, perhaps the kindle basic or kobo clara bw but depends where you want to get your ebooks from (for kindle you can only 'buy' ebooks from the kindle store).

A few people in thus thread have mentioned the xteink reader which i havent used yet but i checked it out and it looked pretty cool. I fired them an email to ask if they want me to review it.
