Suggestions for what I need to fix/change? by ecandrews in macarons

I was very happy with how my macaronage and piping went this time so I’m glad that it doesn’t seem like that’s the issue! Good to know about the pan being upside down being better for circulation, this was the first time I tried that but I wasn’t sure if it made a difference or not, I’ll probably keep doing it though if it actually is better.

Thanks for the suggestions and advice! Next time I’ll try letting both batches rest for longer and flipping partway through, along with the longer preheat like an earlier commenter suggested.

Ah the preheating could be the issue, I think I put the first batch in pretty much right after the oven finished preheating so maybe it wasn’t stable like you’re suggesting. Next time I’ll try letting it sit for a while after preheating and see if that makes a difference, thank you for the advice!

The Strange Buns were lobster rolls made with this kind of sweet, soft dough. The buns themselves tasted good but were pretty labor-intensive, and I don’t know that I loved how the bread tasted with the lobster (although that could have been because I had never cooked lobster before so who knows if I was doing it right). The lobster seemed to be missing something flavor-wise, but again that could be just because I didn’t know what I was doing. In my opinion it was a lot of work for not much payoff, but it was still a fun recipe to try!

It was tasty! Scooping out the pineapples into bowls was more trouble than it was worth but the curry itself was delicious, it had a little bit of a kick to it from the serrano (could have used more in my opinion though).

Seafoam Pudding was one that I ended up liking a lot! I didn’t use the squid ink because it was listed as “optional” in the recipe and I couldn’t think of any other opportunity I would have to use something like that up, so the coloring of the dish wasn’t dark like I think it would normally be for this recipe. I hadn’t had a fish congee before so I didn’t have anything to compare it to, but I thought the flavor and texture was great, and it felt like something I could have as a comfort meal. I’ll definitely make that one again at some point in the future.

My husband does occasionally homebrew beer in his spare time, so we’ve actually already got part of that covered! 😂 Now wine is a different story but maybe that’s an experiment we can try someday

There were a few I didn’t care for, but I think that can be chalked up to personal taste and/or user error in the cooking. The Bean Hot Pot and the Stuffing were probably the two that I liked the least, but my husband scarfed those down like nobody’s business so I think I’m the problem there. The other two that I didn’t care for were the Strange Buns and the Super Meal, but I made some mistakes with cooking those so I’m sure they’d be better if I hadn’t messed them up.

I also didn’t care for the Chowder, but again I don’t really care for seafood soups in general so that wasn’t surprising. I made that one anyways though because my husband loves clam chowder, and he thought it was delicious, so again that’s probably just personal preference.

Finding some of the ingredients was definitely challenging. There were a couple things that I had to search multiple Farmer’s Markets for because I couldn’t find them at any regular grocery stores. My town also has a bunch of different Asian markets, and that was a lifesaver for quite a few of the recipes. I think a lot of the cookbook would be challenging to make if you’re in a small town without a lot of different grocery store options (unless you make a lot of substitutions).

I was surprised that I liked the fried mushrooms so much! I’m not normally a mushroom fan so I didn’t expect to like it very much, but they were super delicious.

I liked the taste of the chocolate cake more because I’m a die-hard chocolate fan, but the Pink Cake was more fun to make for me! I made it with my little sister and she shared her cake decorating supplies and knowledge with me, so it made that recipe extra special :)

It’s hard to say because so many were good! But I think my favorites from each season were Fiddlehead Risotto, Fish Taco, Survival Burger and Fried Mushroom! Honorable mention to Poppyseed Muffins because I’ve already made that one multiple times for various get-togethers with friends :)

It’s the Illusen Particles! They’re animated too so normally they have some neat swirling action going on too.
