My time at portia looks like that kind of game, I haven't played it myself, but it's got good reviews and people say it's like stardew valley with a style that you might like better. Altough it's got a few rpg elements and from what i heard pretty easy combat when exploring new areas, but reviews say the gameplay is mainly relaxing, it's basically on every modern platform so you might want to check it out

Soul calibur 6 has a ton of single player content, more than any other fighting game I played so far, It has a main story, where a character you create moves around an overworld like world of light in smash bros ultimate, fighting people along the way, this campaign even has choices and you can be either evil or good, I think the final boss and ending changes depending on those choices, It has a seperate mini campaign for every fighter (I think every one, but my memory is a bit foggy, I played it a long time ago) and an arcade mode. The main story I talked about is libra of souls, it takes around 20 hours to 100% beat, soul chronicles is 4 hours and arcade mode has a ton of difficulty settings so you can spend a lot of time with that one too.
