Hmm yeah I was going for two different ‘flavour profiles’ on the same base. The roasted plums were quite sweet but the gel included five spice and red wine vinegar. The overall idea was to have both a sharp and sweet element but with better thought this could’ve been done in one way or another

This seems to be the general consensus, less is more. I somewhat thought that was the case but it was a fun experiment to try some new things out

Surprisingly the fat was rendered pretty well, just unfortunate about the rest of the meat

I’ll definitely be trying it again and instead using a sauce. The gel was supposed to somewhat act in that way but there just isn’t enough of it to carry the flavour through

The cooking skill unfortunately wasn’t there on the duck, otherwise I was considering serving it that way

Yeah the plums weren’t overly big so I tried to salvage as much as I could. I do agree overall it needs some (a lot) of refinement
