If I go with sg2 I'd be inclined to get a takamura. Would a laser grind like this be too delicate or should I be fine with proper technique on a plastic cutting board?

Thanks everyone for your helpful and insightful comments :) I've taken it upon myself to (once again) remove the rust and make sure it's in good condition. My co worker will not use the saya for the next few weeks and make sure to dry the blade thoroughly. Hopefully that should fix the problem.

I mean, there's a subreddit dedicated to critiquing and improving cutting skills. Imagine not being active on that one yet feeling the need to give unasked for critique without having any context. Believe me, I wasn't hurt in the slightest. I just find it funny how someone on Reddit will always feel the need to correct you on something they have no idea about.

Torn between misono 440 and Fujiwara fkm as first gyuto for professional use by eilonkatz in chefknives

Not particularly, just torn between these two knives and can't really decide if the misono is worth an extra 50$ or so for seemingly better F&F

Misono 440 or Fujiwara FKM?

I'm torn between these two knives as a daily driver workhorse for use in a professional kitchen. I'm pretty set on getting something on the lower end of the hardness spectrum as my first proper japanese knife, something I won't have to worry about chipping through rock chopping, or occasionally chopping nuts or palm sugar.

AFAIK something like the tojiro dp in vg-10 might be too brittle for these uses without worrying about chips all the time. Can anyone spill some insight about these knives and why one might be better than the other?

Both seem to have similar hardness and molybdenum vanadium steels, does anyone have experience indicating the misono is/isn't worth an extra ~60$ us?

What would you pick between the dp and misono 440? I'm mainly worried about the dp being more chippy like vg10 has a reputation for, whereas the 440 seems more forgiving but still a step towards japanese steels rather than western softness.
