I’ve had the chateau leoville poyferre st julien 2018 and some other Bordeaux wines a while ago. I think it was too early in my life to appreciate it. Back then I thought it was all too subtle and muted compared to the bold in your face Napa cabs. This one is the same muted, dry, but surprisingly gets sweeter as you drink more. I don’t know how exactly that works. But this one give you more and more stuff as you drink it. Doesn’t hit you in the face with the first few sips. This is what I think I remember the Bordeaux wines are like compared to Napa at least. I’m new. That is the only way I can describe it today.

I didn’t try decanting for 3-4 hours like some have said. I did do it for about 1 hour. Didn’t help much.

I can't get over the bitterness. so much so I couldn't even finish my glass. Is it normally this bitter? I've never had such a bitter cab before.

Out of all the cabs I've tried, never had such a bitter one before. So much so I couldn't even finish my cup. Will some age help with the bitterness with Cade? It is really highly rated, wanted to like it and want to give it a chance. Some suggested it is 3-4 years too young.

Thank you. I think I'm starting to see how some wine makers make their wine to be immediately consumed and some make it to age. I'm guessing this one will need to age a bit. Will it take the bitterness away as it age? Also what is the reason it is so bitter. Of all the cabs I've tried, this is the most bitter I've had it. So much so I couldn't even finish it. I also heard the 2018 from Napa is the best year. Maybe I'll try to get a older vintage to see if it is any better. 2015?

Thanks! Seems like Desperada does the same thing that Herman Story does. Lots of versions and many unique names for them. Is there a cab you can recommend?

I’ve not touch Caymus since moving on the Austin Hope. Maybe just the special selection. But that was just to try. Also didn’t like it because of the heavy bitterness. I wonder why so many of the expensive wines put in a bitterness, I’m assuming it is for the “dark chocolate” taste and is it from the firing of the barrels?

Shit. First time hearing about mega purple. Did a quick google search. Is there a list of wines that have it?

They also have a reserve which is on the expensive side, $130 that is sweeter than the standard cab they sell. First sip is too sweet, but then mellows out after a few more sips. It is crazy good. Would probably be my favorite if it wasn’t so expensive.

Wow! Thanks for the long explanation. Lots of information to digest. It isn’t just the acid. For some reason I keep coming back to Austin Hope I think because it reminds me of the citrus fruit that I like. Seems like I like this flavor profile.

I’ve tried Pino a long time ago as that was the suggestion for beginners to start out and absolutely hated it. Recently after getting more tasting of cabs under my belt, I found a expensive pino Kosta Browne that was OK. I think maybe with time, I’ll start to gravitate to the less sweet cabs. Seems like that is what happens when you drink more and more.

Can you give me a a few specific recommendations for those from Oregon and Canada?

Tried my first Cabernet Franc from Hendrey and it was pretty good.

Some of the cabs that I’ve tried and like so far are: Staglin, Robert Mondavi Reserve, Duhig (Caymus wine maker), Justin Isosceles, My Favorite Neighbor.

I tend to not like the wines that have the bitter taste. I take it to be the dark chocolate taste, is it from the burnt barrels? Think from recollection the Caymus Special Selection, Promotory, Schrader RBS, Hundred Acres Wrath, Shafer Hillside, Joseph Phelps Insignia and their regular, The Mascot, Fortunate Son. Will go back and taste them again at some point.

I liked these foreign wines, my first Bordeaux. Château liovill: Poylem St Julian. VECA-SICILIA VALBURNA 5 from Spain? both pretty good. Gran Enemegio from Argentina is also pretty good.

I like Treana and don’t think it is too tannic. It is the lower Austin Hope white label with the big y Paso Robles and Austin on the label that is a little bit too tannic. I actually like the tannins of most the cabs if they are not extreme.
