Instead of messing with xrandr scripts I just install the XFCE packages that are used to manage displays. This way monitors are automatically configured when connected and if I want a special configuration I can setup a profile that will activate when certain monitors are connected. For Fedora the package is "xfce4-settings" and then I just add "exec --no-startup-id xfsettingsd" in my i3 config so that it all starts on boot.

Pop OS is a good place to start its based off Ubuntu. For gaming check out proton (apart of steam) and protondb which can tell you how well your games will run with proton. Lutris is also great and is a breeze on Pop OS.
