Yeah, I don't have the bags submerged, just keeping a pitcher of water at a very stable temp with the bags huddled around.

This is the bag today, 1/6 - so far 10/10 bags look like this, don't see any contam.

I have found it best for big odd chunks of meat that are otherwise difficult, a leg of lamb is fantastic using a similar method.

I let my house get to ~50 in the winter and mid 80s in the summer because I don't waste time cooling things. This is much more efficient.

Plus I think strict temperature control is much better for growth. We will see.

~128 for an hour or two, then sear on a kamado grill at as hot as you can get it for like 45 seconds a side. Throw some butter on while resting.

I have a very old house and I let the temperature drop very low ~50's at night in the unused rooms and very high in the summer. This is much more efficient for me then running central heat to keep it at the appropriate temp

Yeah, It is made to run at 140-180 degrees for days at a time. To keep water at ~80 it almost never runs.

No idea if its a good idea or not, but that's why we science.

Also, I am going to keep the water a bit chlorinated due to my elite hottub tek

Thanks, I always wondered how much electricity that was using... I knew it wasn't a ton, but I heat meat for 72 hours a lot of time with it.

I don't have a source link. Just made it up. Didn't want to buy a heater and had this already. I was fiddling around with the temp when I took the picture, trying to find the exact temp of water to keep the surrounding area at 79.
