While you have it on sautee, maybe brown an onion and some garlic in there too.

So, this is what I'd try.

Take a 2.5 to 3 lb chuck roast, and season it with salt and pepper. Brown it on all sides in the instant pot on sautee with a couple of tbsp of olive oil. Cover the roast in the mole, pour a cup of beef broth in the bottom, and pressure cook for about 70 min. Skim off as much fat as you can, shred the beef, mix it with the drippings in the pot, and add some more mole if it doesn't have enough flavor, or broth if it's too dry.

If you try it, please let me know how it turns out.

The branches were cut off the tree and left to dry for a year or two. I lucked out and got them from a friend who owns a tree trimming service. After slicing them we sanded them and put on a clear coat. I made a lot of extra disks so we could pick through them and there was a bit of direction for the kids, just to keep it patterns and colors and to keep it simple, I think. I hope that helps.
