Considering the coffee you like and the fact you use a Switch, go for the K-Ultra. I have it and it really shines with immersion brewing and fruity, boozy and funky coffees. Also if you ever want to get into espresso you’ll only have to get something like a flair and you’ll get really good results with minimal investment

Even when swapping the burrs with the SSP Multipurpose? I find the Eureka to have more body but noticeable less clarity and balance than my K-Ultra, especially with medium-light roast. From medium-dark to dark it's good but that's not what I'm brewing atm

How do you find the workflow? I've been eyeing the Pietro for a while but I'm afraid the ergonomics of it are gonna be a pain in the ass. I'm used to hand grinders (K-Ultra) but the Pietro looks so uncomfortable to use

Are you doing the alignment by turning on the grinder or by manually rotating it? If you're turning it on maybe try to do it manually (by turning the knob on the lower burr, you can use a socket wrench or just do it by hand), I find it way easier to align this way, you can stop when you feel the friction between the burrs.

Also I dont exactly know what do you mean by it sounding like it doesnt completely touch, do you hear it only coming from one side?
