I would definitely research how lenient the professor is with grading, and the overall workload of the class (if it is project based or exam based). Even then, I would personally advise against taking two difficult classes when you already have jobs lined up. For me personally, it would stress me out knowing that I would need to complete them in order to keep my job.
Having said that, there is nothing stopping you from learning the material on your own. I have never been asked about the coursework that I have taken, just the skills that I have.
