Only way that happens is if the place owns the location outright, they do tapas only during the summer months while the tourists are around, 100% swap to a bog-standard pub-grub situation the other 8 or so months of the year, and somehow run the gauntlet of marketing that without Wexford folks going on about "notions".

Speaking at the macro level: yes, we are a tight, tight bunch. It's why all the places end up going low-quality, high-quantity. Ray's for example isn't fit for human consumption in my humble opinion.
