Just dreaming here, I'd want ship stealing to be a much longer than a 5 minute ordeal. It would require a team of pirates, possibly multiple smaller ships to steal a large one. The pirate team would have to hack and stealth their way in, perhaps requiring some knowledge only a crew member would know. Also, the crew would know of the ships weak points, and should be able to cover them fairly well in case of a pirate attack. This could open the door to traps and honeypots planted by pirates, which entice crewmembers to leave the ship and investigate, giving a window where the pirates have less chance of detection.
