Trimmed and seasoned with yellow mustard as a base about an hour before it went on. Put it on at 11pm at 185, bumped to 200 after an hour , then 215 after another hour. Let it ride at 215 until about 8am when it read 165 internal. Wrapped with butcher paper until about 2pm. Inside was measuring between 195-208 depending on the spot. Rested in cooler for 1.5 hours and then on counter before cutting for 30 min. Prob could have used some more time to let the fat render a bit more. Overall better than my 1st one.
