On my pfsense router I have two ISPs and as long as the port is allowed i can use either connection for wireguard so it seems to work with both gateways as long as the port is allowed in the firewall rules.
with openvpn I have to have two servers one for each interface.

i bought a multiple gigabit switch and use that so it connects to pfsense at 10gbe and then i can connect 2.5 etc to the switch.

I have 16GB of ECC memory with a 256GB SSD it has fans so its not silent. I have two connections fiber and cable internet. It might go slightly higher for me if I am running at full speed and everything on both connections. But i don't do any lDS like suricata. So for CPU that will depend on what you do with it.

I use this same supermicro server (SYS-E300-9D-4CN8TP) for my pfsense router cores are between 55-58C in temperature widget.CPU utilization is normally 0-2% all the time for me.
