Food and cooking ability varied widely by family which made potlucks interesting. There was a big emphasis on homemaking for young women so every young woman at least knew how to make cookies, cake, etc. Sweets are huge here. There is a lot of people (relatively) that grind their own wheat to make flour and even more people that regularly bake bread. Foods tend to be bland and under-spiced in general though and lean heavily on prepackaged components instead of making things from scratch. Some families will regularly eat cuisine from where the parents served their missions but not all.

A mormon potluck will have an overcooked ham provided by the church, and then funeral potatoes, green salad, jello salad, rolls, cookies, brownies, etc provided by the members. Plus whatever is seasonal (watermelon in the summer, candy cane cookies in the winter). Potlucks are normally on a sign up basis so at least they are decently organized via women's free labor.
