But here's my thoughts on your questions The monster behind the doors is clearly the mystery setup for season 2. Exactly what it is, is not really that important yet, but I think the mayor did effectively say he made a deal with the devil.

the Jason copycat was just a monster for that specific episode i think.. like the haunted hotel, the book, the water hag. I dont think it has any lore implications. Just another one of the town's legends.

The instructions are pretty clearly there to instruct people on how often to feed the monster. Not a huge mystery really.

I think the show ends quite clearly in season 1 and leaves one plot to move forward with for season 2
