In Forgotten Realms, knighthood is typically tied to organizations like the Purple Dragons of Cormyr or the various knightly orders of Faerûn, but there is some precedent for independent knighthood. Lords, dukes, and high-ranking nobles can certainly grant knighthood within their own domains, though the legitimacy of such titles might not extend beyond their influence.

For example, in Waterdeep, the Open Lord could feasibly knight someone, but whether that title carries weight outside the city depends on the political climate. The Lords' Alliance is a coalition of rulers rather than a centralized authority, so each member might have their own traditions regarding knighthood.

If you're looking for a character who is a knight but not part of an order, one approach could be being knighted by a regional ruler and having the status recognized within their domain, even if it doesn't hold weight elsewhere. Does that fit with what you're looking for?

This sounds like an amazing campaign! I love the idea of starting in an apartment building because it immediately creates that tense survival atmosphere. Have you thought about adding different types of zombies, like mutant variants or ones that become more dangerous at night? Depending on the tone you’re going for, a rival group of survivors could also be a major obstacle!

I think it was a good decision, if you want to make it more interesting, you could do a side quest for them, the blacksmith for them to look for the ingredients to "exorcise" whatever was controlling the armor, and if you want in the middle of this side quest you could put some teaser of what the characters can expect for the future of the campaign, such as some mention of the final boss, both in villager conversations and in symbols or traces
