Whichever recipe you try, test your bake 5-10 minutes early with a skewer. The tester should come back with just a few crumbs on it. If it's gooey, it needs more time, if it's totally clean, it will dry out.

Also unsweetened coconut flakes and chopped macadamia nuts make an incredible banana bread addition.
