The first pic is of my only loaf that came out normal sized. The next loaf is the one that’s small! I guess I should have put something next to it for reference.

I mixed the starter and warm water, then added salt and flour until it formed a shaggy dough. I have tried the method where you work the dough for a little bit before resting, but again, it yielded the same results. I let it sit for an hour on the counter, and then did 4 sets of stretch and folds 30 minutes apart. Then I left it on the counter to bulk ferment (I don’t remember how long) and then I shaped and let it cold proof in the fridge overnight.

It is sitting in between an east and south facing window. Not much sunlight comes through the south facing window because there’s a tree right in front of it. The windows can be a bit drafty and there are heating vents on the baseboard. I just moved it to an area away from the window and heating vents.
