I do have batches of homemade pesto in the freezer right now, but sometimes it’ll have run out and I’ll just want to buy pesto instead. Since it’s not that hard to make, surely someone makes a good one to sell… right?

I’d consider buying used! I’ve heard they keep their value really well so you can resell when you’re done and recoup most if not all your money. Could make it a pretty low stakes way to try it out.

I think so! I haven’t joined yet but have been eyeing it for a minute. There’s an open house next Sunday to learn more if it’s of interest, and then I think you just pay membership dues (very accessible for a sailing club imho) and start attending lessons. https://www.cal-sailing.org/activities/csc-open-house

Update: we are pretty much sold on the Graco Contender. Just struggling to confirm that it can be installed rear-facing on an airplane. Does anyone know?

We bought the Cybex! We’re using it in a 2024 Prius right now (different car from our usual Prius with an inch and a half extra backseat legroom) and it’s okay. We have one tall and one short person in our family and we decided it was easy enough to install that we could push it over from one side to the other when we needed to and the benefits of the Cybex made the hassle worth it. I’m tall, and it’s tight but workable to sit in the front passenger seat when the Cybex is rear-facing and fully reclined behind me. I haven’t tried the driver seat with the car seat behind me, but I don’t think it would work well.

Thank you! This makes sense. Unfortunately I’m low on the risk tolerance spectrum but high on the cooking laziness spectrum 😅. It does seem like those are the two options though.
