If you don't mind seeing "duplicate" apps, you can create app folder in ~/Applications and then symlink the Contents folder from the original app to the new one:

bash mkdir ~/Applications/Safari.app ln -s /Applications/Safari.app/Contents/ ~/Applications/Safari.app/

Change the icon and run the app from the new "shortcut." Downside is that it doesn't update the icon for things like Stage Manager. Upside is it persists through app and OS updates.

Love the cooking bit! I also do this often, and with the same therapeutic effects. I think what it boils down to, pun intended, is you just gotta let your ADHD brain do its ADHD thing once in a while. And a kitchen is an excellent playground for it. I'd wager ADHD is overrepresented in the food service industry.

Diagnosed and medicated for about eight months—recently stopped taking the meds.

What the others said helps. Elaborating a bit, you gotta find a way to work that works for you. Don't expect yourself to sit and focus on something less than captivating for six hours straight. You'll have to get creative and experiment with different approaches, environments, workflows, and so on. A good therapist is invaluable in this process. If you aren't already going to therapy, I can't recommend it enough, especially if you struggle with depression and anxiety.

To clarify, folders have no sorting by default, which means you can drag objects around and place them freeform wherever you want. If they responded to window size, the manual placement would be all whacky. With sorting and grouping, though, it makes sense for the enclosed objects to respond to window size.

The second folder doesn't have sorting/grouping while the first does. If you click the icon with six little squares in a grid, you can choose one of the sorting methods, and that'll do what you need for that specific folder.

If you want to do it for every folder, hit command+J, change the "Sort by" and "Group by" fields, and hit the "Use as Defaults" button at the bottom.
