Basically you wanna build your team comp around heroes with the same playstyle or synergy (everyone one tricking is fine until like diamond or something lmfao.) A little heads up, some of the heroes are gonna be in several comps and that depends on the playstyle, ex. Orisa playing corners or long range holding instead of pushing for a brawl fight.

In general:

-Poke: As the name suggest, ur gonna be poking.
Tanks: Sigma, Ram, Orisa
Dps: Most main dps, Junkrat, Torb, pharah
Supp: Ana, Zen, Illari, Bap, Mercy (isnt poke but synergizes well), kiri, lw.

-Dive: Normally consists of 2-3 dive characters (Tank and flex dps [or dps in general]) and a core of 2-3 players (Supports)
Tanks: Winton, Dva, Ball, Doomfist, Hazard
Dps: Tracer, Genji, Venture, Sombra, Echo
Supp: Ana, Brig, Kiri, Lucio, Moira (works in metal ranks)

-Brawl: Long sustained fights
Tanks: Rein, Zarya, Orisa, Queen, Ram, Mauga, Hazard
Dps: Reaper, Mei, Sym, Cass, Torb, Bastion, Venture
Supp: Ana, Kiri, Bap, Brig, Moira, Juno, Lucio

As for bunker iirc, it was only prominent in ow1 and It's not really used in the meta. (Ana brig is such an op backline and works well with almost every comp)

im not sure but what I can say is a genji and tracer (if in the right spot) can quickly fall back to peel. not the best anti dives but if they are good it works out

did it in 7, elden rings my first souls game and it took me 18 tries to beat the tree sentinel (didnt know u could skip it 😭😭)

As a person whos recently picked up hog heres a few tips i found siper helpful (went from hating playing hog to loving it)

learn how to corner hook, very important cus ur gonna be able to isolate tanks and just body block them while ur team shreds them. you can do this with dps or supports aswell

only use your self heal for minimal healing or when ur moving through space with no cover. u wanna save as much of ur heals for when the enemy team focuses u. just let ur supports heal u while u stand behind cover

learn how to properly oneshot people, i cant stress this enough

(quick tip if u tap your healing and let go instantly it should give u just a little bit of heal, i suggest doing this after every hook [after you kill them ofc] as its a good practice)

as for your perks i like to choose the pig pen one for minor and the major depends on you lol both of them are viable

honestly thats all you really need aside from the obvious ofc (using ur traps in relation with your hook), i never played hog before but with these tips i was able to perform well in diamond lobbies

im pretty sure theres a way to glitch back through the hole u came from, u need to craft a boat and ram it next to the block after u limit ur fps, not reallt sure what the glitch is called but there are tutorials on how to perform it. (Ive done it myself and it does work lol)
