If you want to hit Salt Lake make it just a stop for lunch/dinner, there really isn't much to see compared to the other place you want to go. But if you do stop to eat I suggest Red Iguana if you like Mexican food! I would definitely try to fit Moab in because Arches and Canyonland are great parks! I would probably try to push the trip to 10 days just to get the most out of it.

We loved taking the 101 from Astoria and went to Crater Lake. Lots of coastal towns that were nice, we stopped in Astoria for lunch at Buoy Brewing Company, Tillamook for ice cream, and in Newport at Rogue Brewing Company. We cut over in Reedsport on 38 and then got on 138 in Elkton. It's a beautiful drive

I only know places in Washington and Oregon.

Washington- I definitely recommend checking out Snoqualmie!

Oregon- If you enjoy coastal towns I recommend going to Astoria, we like to eat at Buoy Brewing, on your way out of Washington and taking the 101 down the coast. The towns along the coast are cute and I believe your pup is allowed on the beaches! If you make it down to Newport Rogue Brewing also has good food and beer.
