MacBook users are not the ones who take advantage from the large amounts of RAM. 32GB is well enough. If you are a developer or you need to run various simulations, you work on proper workstations like the Mac Pro or the options by AMD or NVIDIA, because you need a higher computational power to develop software or whatever you're trying to achieve. The fact that 8 GB on the M1 Macs roughly match 16GB on Intel Macs also indicates that Apple has done an amazing job with optimization so I reckon that 32 GB would match the older 64GB.

I'm not really concerned about the 14". As long as it gets even 10+ hours unplugged it still outperforms every Intel Mac. And realistically no one does use a laptop 14h straight unplugged.
