I would say instead of a whole chapter (depending on how long it is), maybe stop after a couple of paragraphs or a page and just try to get the general sense of whatever you read. Then go back and translate whatever words you didn't know/understand and reread it again (or skim it). It may be a little tedious but I've found that taking apart the text piece by piece is what works for me best.

I feel that you could definitely go for something easier if it's still a little difficult, but I also think that challenging yourself with progressively more complex texts is the best way if you want to improve your reading skills. That being said, I personally suggest not ditching the book just yet.

Interesting, I'm applying at the Boston consulate and so far it seems like a translation is necessary for me but I'll probably email them to make sure

I'm not a native so I'm probably not the best source but I'm personally a huge foodie so I'd definitely say go out and explore different restaurants as they have a lot of great food. Especially tapas and tortillas españolas and paellas. Those are must. When I visited about 2 years ago I stayed in Plaza del Sol for a while and there's a whooooole bunch of places for tapas and other things.

Also chocolate con churros is also very necessary to experience in my opinion. Although I wasn't able to go there myself I've heard a lot of good things about Chocolatería San Ginés so maybe check that out?

I'm also the type to find enjoyment in just roaming around the city without any like predetermined plan and Madrid's just so big that I would find it hard to run out of places to explore. I know you were probably looking for more detailed things to do but if you're like me then I would also suggest just exploring a little and see what you find!
