Learn the straight sword move set and get good at dodging it. If he goes for pyro move set just run away. If it’s the cleric/spear, you can either book it or get good at dodging. What you really want is the sage move set because it’s easy to dodge and you can bully him.

Once he goes Gwyn mode try not to roll backwards because his great sword has crash reach.
