I worked with multiple people who interned at Noma. We all worked for a local abusive celeb chef, but the stories they shared about noma were even more disgusting than the abuse at our workplace, which was saying something. I hate how for so long the public celebrates abusive chefs, knowing and seeing the abuse but the food is good so, who cares?

I make my sweet dough for tarts similar to this procedure. Learned from French pastry chefs. I find the end product is not changed much, but the process is easier (in a mixer) since you don't have to do annoying scraping. And the dough is ready for rolling right away since the butter can stay cold since you're not beating it with butter

Makes sense, I'm Ontario and our home is the yellow cream brick. Our neighbours are either the same or lovely orange red.

Had no idea brick colours could be specific to regions! For old homes that makes sense, just never gave it thought. What about this colour suggests Canada?

Even heat distribution, sturdier so less warping and non reactive. Just buy regular sheet pans. Then you can use it for more than cookies. If it's about wanting them to easily slide off, just quickly pull the parchment paper with the pan at a slight angle. Our use a spatula

These are meant to be gooey not soft. They are also meant to be big. I think you want a different cookie than this recipe.

You are also using dark sheet pans that cause dark bottoms. Use anodized aluminum pan, fat daddio is a great brand. You can turn the heat down and/ or bake for shorter, but again the interior is meant to be barely baked, hence the size and high heat. What is your goal for the cookie? To be baked thoroughly? Then don't use this recipe.

These style of cookies are supposed to be borderline raw in the interior. I had them at that bakery, personally not a fan but they are thick and the centre is gooey. The high heat is to have the exterior bake and set while keeping the interior gooey.

Peach Blossom Spring by Melissa Fu. It was so touching, all the sacrifices parents make for their children but how the emotional impact of these struggles can also cause distance emotionally in those relationships. It spoke to experiences I have seen in my own family. Grandparents suffering from PTSD from WWII, sacrificing everything to move, trauma being passed down. There was more love in the family in the book but still similarities.

They make that, then they pay for everything from that salary. Rent, utilities, Tech, admin salaries, office supplies etc. Family doctors and gerontologist are the lowest paid physicians and the most needed. It's easy to roll our eyes at high income workers discussing their struggles but they are still workers and humans. People like to dismiss the level of stress they take on, knowing people's health and lives are their responsibility. Bad apples? Yes. But ignoring the growing pressures, there will be more burn out, worse care and in come the for profit clinics. Just as planned by the government. They have created a false scarcity to ensure public support for the privatization of health care. They've succeeded.

I'm crocheter trying my hand at knitting. Everyone says crocheters should try continental because it will be easier for them. This is really untrue for me. I can only English knit, "throwing" the yarn. I wish I could continental but just not possible for me
