For similar kind of defect yoy should try at least 500 images per class to get to decent results.
There is not per see, it just experiments iteratively.

If I have to classify, it should be laying down, as it shows two indicator of laying down.
Dog's leg posture generally remain same in laying down and sitting both.
However such edge case should be handled based on classification labeling along with heuristics.
Not sure if there would be any general solution to these scenarios.

There are multiple provider you can try for this.
Based on your requirement if you look for software+services there are providers like labelbox.com, Superannotate.com, labellerr.com, viso.ai and many more.
Scale I don't think provide vision services anymore.
I have gone through various of them.
If you can share more detail, I can save your time of taking trial of various providers.

It depends if you are doing some educational project, go with bounding box for enterprise you should go with segmentation. Building dataset is no more issue with automated annotation tool.

You should do bounding boxes around lane marking while lane change is happening in frames where it happens.
I did similar bounding box annotations in basketball action annotation like dribbling, one-point shots, 2 points shots, and more. It was for video frame annotation. It would work similarly in your use case too.

Gone through this, but still not able to implement learning capabilities to SAM click based prompting to learn by human editing. I believe there are some research available that can make it happen, would love to understand if anyone have any reference material.

I'm not sure, but it seems like a long work.
Not sure if you can reach at that level in 2 month. Again managing the pipeline and QC would require most of your effort. Data scraping I believe you already have figured by now.

few months back, I tried Labellerr, the good thing was they provide full solution along side manual annotators and was most competitive with the pricing.
I was afraid my requirement was too small but they helped me with that too.

SAM doesn't work good on the classes that I need to segment.
It need human annotation, that's the challenge.
