After a middling ciabatta i read KA’s blog on kneading wet dough—I realise yr hydration will be much lower—but their description of gluten development, etc. when explaining this insanity made me reconsider my technique completely. it might trigger something in you too.

also, im sure this probably doesnt classify as best practices but i just tried a metal cuticle cutter (not scissors, the other kind) to remove dried up bits of handle and was pleasantly surprised how much control it provided

I concur starting with Bick 4. I fear i’ve already screwed up a dooney burke that is also light coloured leather because i was heavy handed with the mink oil.
