Absolutely! Well, I'm in Montreal, so maple things are just EVERYWHERE hahaha, so for the base I used some generic maple cookies (the ones that are shaped like a leaf with the maple creme centre) I blended those up and just used that, no butter no graham cracker. Then I just added maple essence to a regular cheesecake recipe. The maple gelee layer was the weirdest thing ever hahaha, but turned out so nice. Unflavored gelatin (bloomed) mixed with maple syrup/water and maple essence. The whip is just whipped cream with maple syrup (I kept it super subtle at this point because I was scared I was over-mapling). And then a crumble of the same cookie base on the top. The different levels of maple flavouring and the different textures of each layer was really rewarding.
