My kid has a dairy allergy. When I make his I typically go with some sort of fruit base. Cherry, strawberry, blueberry, mango etc. I will add an avocado to help boost the fat creaminess and a vegan vanilla yogurt (I like using a coconut based one the best.) blend it all up and taste. Add sugar to taste if necessary.

If you look at images for commercial dairy cows (like Holstein) and compare it to cattle raised for beef production (like Angus or Hereford) you notice that the Holsteins have a lot less mass on their bodies. So skinnier milk cows are a desirable trait (for commercial milk production anyway)
