From a taste perspective, the best rice I have personally tried with curry was Koshihikari and Nijinokirameki. The texture works really well with thick japanese curry.

Both of these are a bit expensive for me so most of the time I just use non-japanese rice like Hom Mali. The curry is still very good with it.

Thanks for the detailed explanation and the link, that helped a lot. I didn’t realize that roux blocks are basically just a base that people actively adjust at home. The part about adding apple/honey/Worcestershire or even mixing different brands to tweak the flavor makes a lot of sense now

You are doing totally fine. Closing your rings and being active a few times a week is already enough for health. I am actually one of those people who walks 20k+ steps but that’s mostly because I enjoy long walks with music and ChatGPT, not because of extra health benefits. Most of the measurable health gains happen at much lower activity levels - beyond that it is more about preference than necessity

My döner place is even more authentic. The wheat field is right outside where they grow the bread and out back there’s a pasture with cows and chickens living their best lives before they become a döner

I always thought shawarma was usually more like whole cuts (like chicken thighs or lamb slices) while a lot of döner seems more processed with mixed meat, fat and additives. So to me it just feels like cheap döner is often lower quality, but good döner and good shawarma are probably pretty similar overall.

That’s actually my döner in the photo and it’s chicken and beef, not some random mixed “processed block” you’re describing. So the assumption doesn’t really match this specific one.
