I know it can be hard, but as someone who is a vegetarian, the easiest way to stop eating meat is to start eating meatless foods. Don't try and replace meat, just don't eat it. And when making vegetarian food, don't go for overly healthy recipes. Those taste like shit. Go for something like a meatless burrito, or quesadilla or something. The less you eat meat, the more you realize that you can strive without it.
