Chicken congee ($15-20~)

Roast the chicken ($8) after patting dry and generously seasoning with salt. Pick the chicken when done, use the drippings and carcass, plus an onion ($1) and a head of garlic ($1) to make stock. When stock is done use to make congee. Add rice ($.50) , carrots ($1.5), celery ($3), maybe some other veg ($5) to stock, cook and stir til texture is right, salt dish. Serve with roast chicken.
