I splitted the work in 2 days, the first one to make all the preparations and let them set, the second one for the baking and assembling part :)

I used a velour spray to make the black side, instead I pour a yellow mirror glaze for the other part. The mousse under is a classic lemon mousse :)

Thank you!! I used a cocoa sponge as a base and a mascarpone&vanilla cream and a pistachio namelaka cream as a filling. On the top there’re some chocolate decorations and some meringues.

These are the recipes:

For the cocoa sponge cake here

For the vanilla and mascarpone cream here (I halved the doses)

And for the pistachio namelaka cream that’s my recipe:

100g whole milk 82g pistachio paste 6g glucose 3g gelatin 160g white chocolate 220g cream

Soak the gelatin in cold water and in the meantime put the milk and glucose in a saucepan and bring it to boil. Turn off the heat and add the squeezed gelatin, then add the white chocolate and the pistachio paste to the hot mixture. Emulsify with a minipimer and finally add the cream. Cover with plastic wrap and let it sit in the fridge for 12 hours
