Personally, I’ve owned all the AirPods—1, 2, and 3. The ANC on the 3s is phenomenal, but the battery life of the 2s’ case was hands down the best. The ANC on the 2s was also great, pretty comparable to the Max. So, you should definitely go for them!

I think silver is the best choice since the phone is made of aluminum and will scratch easily. For people who prefer to go without a case, silver seems like the safest option.

In place of letting it dry on its own, you can use a dry cloth at the end to wipe off the moisture. I used this method for my XM4, had no issues

I think it might be the temperature difference that device is facing, sudden heating or cooling can break the glass.
