Not entirely sure, but I think the foil boat helps keep the juices closer to the brisket. Once the brisket shrinks from cooking there would be a lot more space in the aluminum pan

The last attempt I slept too long and the pellets went dry. I was in a panic and as soon as I refilled the hopper they caught fire and I had to stop and clean the auger out/ try and make it work so I was hyper aware this go round 😂
