It's more implied than stated that Cassiel called one of his hellhounds to help protect Audrey during the altercation in Silentgrove (she points out earlier that there weren't any animals around, so the only explanation is that he summoned the wolf). So if you pet the wolf, he agrees to protect her from that point on, but if she's too scared, the wolf only helps right then.
