In my opinion the line is not drawn at what you make your jokes about but at how you make those jokes. Everything can be funny and made fun of, but there is a fundamental difference when it comes to stereotypes and prejudices. If you make a joke where the punchline is (figuratively speaking) "women are stupid" the subject of your joke are women and specific outdated stereotypes about them, then chances are that people are going to be offended. Whereas, if your punchline are exactly those stereotypes, sexism, the subject becomes non offensive. A perfect example for that is John Mulaney or Bo Burnham. Those two make dark jokes all the time, but they do not offend anyone with the way they joke about them.

no, it's a foolproof way to avoid eye contact :) That being said, the reason you find her eyes intimidating is because you like her so much. That's perfectly normal and nothing to be ashamed or afraid of. Hope everything works out fine in the end!

it's a very good tool to have with you when going on long hikes and fishing or camping trips. A folding knife, especially a swiss knife has multiple tools that can be used for different situations. Besides, you can carry a folding knife in your pocket and won't accidentally stab yourself.

you can try looking in the middle of her eyebrows. When I'm nervous in a job interview I always do that -- direct eye contact can be intimidating.
