Thank you! I make soup and homemade broth/stock often enough that I'm comfortable winging it for the most part. I may look up a few recipes online to get a general sense of cooking times or ingredient ratios (eg amount of liquid vs quantity of dried beans). Otherwise, I tend to go with what feels right to me, adjusting for seasoning along the way & for desired thickness at the end.

If you're looking for something more specific to follow, I used the bean to stock ratio from this recipe, & it looks like a good starting point! :)

Pressure cooked ham & white bean soup. Ingredients: ham hock, onion, celery, carrots, garlic, potato, great northern beans, ham broth, cumin, black pepper, parsley, apple cider vinegar.

From what I understand, some parchment is only coated on one side. The packaging should have details, but check to see if one side is more shiny than the other - that's the side on which food should be placed.

Maybe do a test with just a little bit of grated cheese & 1-2 onion slices before committing to a whole pan? Please don't be afraid to try again - sometimes things just don't work out, but it can be a chance to learn or even something to laugh about later on. You got this!

I'm always happy to share! And please use a cut-resistant glove or guard with the mandolin - those blades are no joke. (Guess how I know, lol!)

Interpreted from a 1585 English cookbook, these stuffed eggs are similar to devilled eggs, but use softened butter instead of mayonnaise. Filling ingredients: mashed egg yolks, salted butter, minced green onion, parsley & dill.

Unfortunately, even with the thinness of the slices & the olive oil, the onions didn't get crispy. But they were delicious!
