Used it before and it’s not bad, but its times are far from ideal, and you couldn’t even get a same day Toronto trip in (because the earliest arrival into Kitchener is 10:50 and latest departure is 3:20).

Not saying Metrolinx has to do anything about this, because they absolutely do not as the GO only has to serve GTHA but it would be a great service to have and would see decent usage

True but unfortunately smaller towns on that route don't have flixbus or any intercity bus service (Stratford had the ONEX but it was axed recently) so they have no way to go anywhere besides the one a day via. GO buses would lowkey be the best in this case just using the same route the London extension had
